Chicken Lentil Casserole

Title: Chicken Lentil Casserole
Yield: 4 Servings

1 c Lentils
4 c Cold water
2/3 c Green onions; minced
1 tb Parsley; minced
2 Cloves garlic; minced
1/2 Sweet red pepper; diced
1 tb Cornstarch
3 tb Water
1/4 c Tomato puree
1 c Chicken; cooked and diced
1/8 ts Black pepper

Wash lentils and soak overnight in cold water.
Drain, saving 2 cups. Simmer lentils and
vegetables until tender. Combine cornstarch and
water and add to pan along with tomato puree,
cooked chicken and black pepper. Cook, stirring,
until it boils and is thick.
